fall snacking: pumpkin seeds

Once you’re done carving that pumpkin don’t forget to rinse the seeds clean and toast them!

HOW TO: Scatter the seeds on a metal baking tray and drizzle with olive oil, coarse salt and pepper.  Cook at 375F for 20 minutes, then remove from oven and toss them before returning them to bake for another 5 to 20 minutes (depending on how toasted you want them!).

According to nutrition-and-you pumpkin seeds are surprisingly high in calories but they do offer many health benefits including being high in fibre, vitamins, minerals and have many health promoting antioxidants!
