“What’s for lunch?”

On Saturday we had some friends over to watch the hockey game.  My hubs made his famous deep fried BBQ chicken wings and I whipped up a quick blue cheese dip to accompany them.

Today, I felt like having soup for lunch but none of the cans in the pantry seemed appealing.  I opened the fridge and wondered what I was going to do with the leftover blue cheese dip, when I suddenly had an idea: SOUP!  It turned out to be real yummy and a small bowl is super filling.  Makes you wonder what other dips would make good soups!?

2 cups of blue cheese dip
2 cups of chicken broth
4 cups of broccoli
1 cloves of garlic chopped
A dash of pepper (freshly crushed three colour peppercorn) and salt.

Pour dip, broth, broccoli, garlic, salt and pepper and add the water just so the broccoli is almost covered (about 1 to 2 cups).  Bring to a boil and simmer for 15 minutes.  With an immersion blender emulsify  until broccoli is smooth and blended. Enjoy!
